I am very excited to share with you my first ever loaf of homemade bread! This humble loaf has quite the story to tell.

For years I’ve had this notion that letting yeast rise or creating a starter for sourdough was too difficult for me. And after many attempts, I decided to take a step back and build some confidence.

So one night I said, “I’m making bread tonight!” and I just did it. It wasn’t hard or tricky, it just worked!

Sometimes in life we have these mental blocks. It isn’t until we finally give ourselves the space to try that we realize that we had it the whole time. And success tastes so good!

I started a new ginger bug for ginger beer today! This is super easy way to incorporate more probiotics in your diet, and is so fulfilling to make! It does take some time a patience but is well worth it !

To make your ginger bug (your starter) place the following ingredients in a jar
1 Tbsp on grated ginger
1 Tbsp of cane sugar
2 cups of water

Let sit in a warm dark place for 5-7 days. Feed 1tsp of ginger and sugar daily to feed the probiotics.

When it bubbles on its own or from stirring it is ready to be made into ginger beer. The warmer the environment the faster it will ferment!

Made almond milk for the first time!! I cannot believe how easy it was. Plus this almond milk is better for you than almond milk you get at the store no additives or gums to cause inflammation and other dis-ease

Creamy vegan tomato bisque.

I have been really into soups lately. I think I have made one every week for the past month! So I thought it was time to share one of my favorite!

The best part about this soup is you just dump a bunch of things in a pan and bake it!

~3-5 TB extra virgin olive oil
- 2 pints of tomato’s of choice ( I use grape- or what ever is in discount bin)
- 1/2 yellow onion
- 1 head of garlic halved sideways
- 1 sprig of rosemary
- 1 bunch if thyme
- 1 bunch of sage
- salt and pepper
- 1 can of coconut cream
- 1 cup of vegetable broth

Add olive oil, tomatoes, garlic cut side down, onions, herbs salt and pepperto the pan or pot. Bake in oven at 480* for 30-35 minutes if until tomatoes start to char.

Let cool, then squeeze garlic out of its outer skin. Add coconut cream and broth and blend in a blender or with an immersion blender.

Garnish with fresh rosemary and enjoy!

Taking some time to ground no matter the weather. The cold snow was soothing to my feet after a long hike. Taking time to reconnect to nature is more important than ever in winter when we spend more time inside and in front of screens. @devilslakestatepark
